Ireland’s newly crowned Bar of the Year 2026, Pig’s Lane, is kicking off its reign by bringing Athens’ world-renowned The Bar in Front of The Bar to the cobbled streets of Killarney for one night only.
On Wednesday 23rd September, the Greek streetside bar ranked No. 2 in Europe and No. 47 in the world, will join forces with Pig’s Lane’s own mixology masters for an evening of inventive cocktails, elevated techniques and a shared commitment to sustainability.
Beginning at 7pm, discerning drinkers will descend Pig’s Lane’s staircase into an underground realm of innovation, where both teams will push cocktail making beyond the expected, using advanced techniques including carbonation and sous vide, from creating naturally infused, fruit-forward flavours through low-temperature sous vide extraction to adding a lively, fine-textured fizz through carbonation for greater depth, texture and complexity.
The cocktails on the night will be built around Hennessy, in collaboration with ‘Edward Dillion’ advocacy team.
And if you want a taste of what’s to come, The Bar in Front of The Bar’s signature C.R.E.A.M. serve brings together an icy blend of Rocks & Grapes and Greek herbs, topped with a warm white chocolate and coconut float and finished with a swig of Hennessy for an extra kick.
